With an appearance characterised by straight and tightly rolled tea leaves, Mount Feather is harvested only in Spring. “Mount” comes from the processed leaves resembling mountain peaks in a Chinese ink painting. “Feather” refers to the sheen of white hairs covering the tea leaves before processing. This tea is much loved by many green tea drinkers and is known as one of the ten best teas in China. As one of Ten Best Teas in China, this green tea was reserved as a tribute to emperors. Commonly known as Mao Feng, it is harvested only in Spring with the best pick having 1 bud plus 2 leaves intact in emerald green. Indeed, it had entered tea markers of London and Paris in the early seventies.

Green Tea
is plucked, dried and rolled. It is not oxidised because during the rolling process, oxidation is prevented by applying heat. Simultaneously, the leaves are shaped by curling with the fingers, pressing into the sides of the wok. The leaves are then rolled and swirled - countless shapes have been created, each with a different taste. The leaves are then given their final firing to fully dry them, after which they are done. The liquor of a green tea is typically a green or yellow colour, and flavours range from toasty, grassy (pan fired teas) to fresh steamed greens (steamed teas) with mild, vegetable-like astringency. The more popular varieties of green tea include Dragon Well (also known as Lung Ching), Genmai Cha, Gyokuro, Gunpowder, Hojicha, Pi Lo Chun and Sencha, just to name a few.
