To use: 1 rounded teaspoon of tea in a strainer per 200 ml
Water temperature: 80°C / Let steep for 3-5 minutes / Drinking temperature: 70°C
 
Green Tea
is plucked, dried and rolled. It is not oxidised because during the rolling process, oxidation is prevented by applying heat. Simultaneously, the leaves are shaped by curling with the fingers, pressing into the sides of the wok. The leaves are then rolled and swirled - countless shapes have been created, each with a different taste. The leaves are then given their final firing to fully dry them, after which they are done. The liquor of a green tea is typically a green or yellow colour, and flavours range from toasty, grassy (pan fired teas) to fresh steamed greens (steamed teas) with mild, vegetable-like astringency. The more popular varieties of green tea include Dragon Well (also known as Lung Ching), Genmai Cha, Gyokuro, Gunpowder, Hojicha, Pi Lo Chun and Sencha, just to name a few.
